Chicken breast fillet has been the darling of diets that adopt low-fat animal protein. In addition to the nutritional table, the cut is also an ally of consumers’ pockets due to its low cost compared to other similar proteins.

Ingredients:

  • 1 kg of chicken breast fillet
  • 2 tbsp olive oil
  • 1 dessert spoon crushed garlic
  • 1 dessert spoon homemade seasoning
  • 1 tablespoon of soy sauce (or seasonings to taste)
  • Carrot strips (same as frying potatoes, one for each fillet)
  • Broccoli strips with the stalk (one for each fillet)
  • Strips of yellow pepper (one for each fillet)

Preparation: 

  1. Season the fillets with the ingredients, wrap them in each carrot strip,  broccoli and bell peppers, and secure with a string or rope. 
  2. Bake in a heatproof tin lined and covered with foil.
  3. Bake for 30 minutes, then remove the foil and brown as needed.

Ingredients:

  • 400g shredded chicken breast;
  • Garlic to taste;
  • Lemon juice to taste;
  • Pepper to taste;
  • Salt to taste;
  • 1 unit of grated carrot;

  • 2 teaspoons of sesame seeds;

Preparation: 

  1. Mix all the ingredients.
  2. Make chicken balls.
  3. Bake at 180° for 20 minutes.

Ingredients:

  • 2 chicken fillets;
  • Salt to taste;
  • seasonings to taste;
  • 1 cup of breadcrumbs;
  • 1 cup of wheat flour;
  • 2 eggs;
  • 4 tablespoons milk (optional);
  • 1 cup of tomato sauce or paste;
  • 80 g fresh Parmesan cheese.

Preparation: 

  1. Season the chicken fillets with salt and your preferred seasoning;
  2. Cover the fillets with a plastic wrap and hammer them to make them soft and thinner;
  3. Put the wheat flour in one bowl, and the breadcrumb in another, and season them, 
  4. Put the eggs and milk in another bowl, season and beat lightly;
  5. Dip the fillets in the wheat flour, then the eggs, and finish in the breadcrumbs;
  6. Place the breaded fillets in a mold with a little olive oil, and bake them in a preheated oven at 250º degrees for 10 minutes. Turn them over in half the time;
  7. Pour the sauce or tomato paste over the chicken, sprinkle the cheese, and return the fillets to the oven until au gratin;
  8. It’s ready to serve!

Shredded Chicken Salad with Yogurt Sauce

Ingredients:

  • 350g of cooked chicken breast fillet;
  • 90g of natural yoghurt;
  • 50 g of onion;
  • 1 glass of orange juice;
  • 100 g bacon.

Preparation:

  1. Cut the bacon into small strips and sauté in a drizzle of olive oil until crispy. Add the sliced onion and shredded chicken.
  2. Put everything in a bowl and season with the yoghurt and orange juice.
  3. Taste the chicken salad and balance the seasonings with salt and pepper before serving, if needed.
