Cod with potatoes and olives

  • 4 desalted cod fillets
  • 4 potatoes, peeled and sliced
  • 1/2 onion, peeled and chopped
  • 500 ml of olive oil
  • Azeolones and chopped chives to taste

On a platter, make a layer of potatoes, cover with the fillets and olives and drizzle with half the olive oil. Bake in a preheated oven at medium temperature until golden brown.   • Salt to taste
  • 1/2 cup water
